In trying to spruce up my breakfasts, I’m trying baked oatmeal for the first time!
There has been a lot of firsts for me lately. Living by myself for the first time, I’m only responsible to feed myself and it’s made me very aware of how many servings there are in the groceries I buy. I bought some almond milk, used less than half and it’s already almost at the expiration date. I also had some blueberries that I picked up in hopes of adding some fruit and vitamins into my diet.
Just like the almond milk, I couldn’t go through it fast enough so another reason I’m making this baked oatmeal.
Since I halved the recipe from SkinnyTaste I ended up using only half an egg.
…what do I use half an egg for? A mug cake!
It was terrible.
The search continues for a good mug cake.
It looked… kind of pretty.
But more importantly, it was good. I think it could definitely be better but now I’m less afraid of baked oatmeals!
